salad with paleo croutons

A salad isn’t complete without that final crouton crunch. Use Mikey’s English Muffins to create croutons that will keep your salad paleo and gluten free, but still have all that needed flavor. Ingredients

  • Mikey’s English Muffins
  • Shredded Kale
  • All white meat chicken breast
  • Raw Cashews
  • Nutritional yeast
  • Salad bar items from Whole Foods including carrots, tomatoes and corn
  • Avocado

Directions

  1. Cut Mikey’s English Muffin into cubes, then pan fry it in garlic and ghee until golden and crispy
  2. While preparing the english muffin, mix the listed ingredients to create salad
  3. Once finished, add the croutons to your salad
  4. Toss with your favorite dressing and top with avocado
