grain free panzanella salad recipe

Thanks, Melissa (@wholisticmelissa on Instagram) for this gluten free, grain free salad that is bursting with flavor and topped with croutons made using Mikey’s sliced bread. Ingredients
- 4 slices Mikey’s bread cubed and toasted
- 2 tomatoes seeded
- chopped ½ red onion sliced
- thin fresh basil chopped
- 1-2 tsp each olive oil
- red wine vinegar
- salt and pepper to taste
Directions:
- Prepare bread and toast in a pre-heated 350 degree oven, tossing periodically to ensure even toasting
- Remove bread from oven and place in a large bowl with remaining ingredients through oil and vinegar, tossing to coat
- Taste and season with salt and pepper to your liking.
- Allow salad to sit and marinate for 10 minutes then serve.
- Additionally you may add: grilled shrimp/chicken/steak or fresh mozzarella cheese.
